Vegetables in a Brownie?
Ooooh yes! I know at first glance this may sound strange but trust me, once you’ve tried it, you’ll be convinced. Juicy, chocolatey, healthy and delicious? You say this is too good to be true? I’ll prove you wrong.
This healthy chocolate brownie recipe is perfect if you’re a little chocolate tiger, but still care about healthy eating. It’s also perfect for kids (or adults) who aren’t necessarily the biggest fans of vegetables, to feed them a secret serving of zucchini. Because I can promise you, no one would ever notice that this dough is largely made of vegetables. In my opinion, one of the best brownie recipes ever. Fluffy, refined sugar free, vegan, moist and this deep dark chocolate taste … heaven!
Ingredients
600g Grated Zucchini
250g all-purpose Flour
65g dark raw Cacao Powder
1 pack Baking Powder
1 pack Vanilla Sugar
240g Xylitol (Birkenzucker)
60ml Oil
A dash of rum
Calories
The whole batch is around 2300 calories (whole baking tray)
Depending on the size of a piece, this equals in 78 calories if you cut 30 pieces
Step-by-Step Recipe
- Preheat your oven to 175 degrees celcius
- Mix all dry ingredients
- Add the oil and mix in the grated zucchini
- Don´t worry if the dough appears dry – just keep on mixing until a creamy dough forms
- Spread on a baking tray
- Bake for 20-25 minutes
- Test the dough with a skewer – it should not be completely dry. We want the brownie to be juiiiicy!

Want to add some more micronutrients and vitamins to your cake?
Bring 300 g frozen berries to the boil and puree them. Depending on your taste you can either sift out the berry seeds or leave them in the sauce. Add one or two packs of vanilla sugar and let it cool down a bit. Pour the berry sauce on the cake and you are finished with your delious, yummy, fluffy and moist healthy brownie.
